I've adapted a recipe so that I can still have something yummy that's breaded. It came out so well that I have to share it.



4 to 6 boneless chicken breasts
2 tablespoons wine vinegar
2 tablespoons brown sugar
1 cup orange juice
2 cloves of garlic, crushed
1 teaspoon parsley
3 tablespoons amaranth flour
3 tablespoons potato flour
1 teaspoon McCormick's chicken seasoning
olive oil

Heat oven to 375. Add vinegar, brown sugar, orange juice, garlic and parsley to a small saucepan and heat to boiling, then reduce heat until sugar is dissolved. Take from heat and set it aside while you mix the flours and chicken seasoning, then dredge the chicken in the flour. Heat up a skillet and the olive oil and brown the chicken, taking care not to burn the chicken, the potato and amaranth flours brown much more quickly than wheat flour. Not that I found this out the hard way or anything...Anyway, plop the chicken into a baking dish, pour the orange juice mix over the top and bake, uncovered, for about 40 minutes. Baste the chicken with the orange juice, every so often, as it cooks. Serve with rice.

See? Easy recipe and really yummy. I stole it from somewhere and adapted it for my own needs (plus, garlic powder? *shudder* I had to make it fresh.)
