We spent a rather low key day, watching TV and waiting for the ham to finish being all yummy and glazed. I used a recipe posted on [livejournal.com profile] trashy_eats and it turned out spectacularly well. I think I may have eaten a pound of ham today. The chances of that are really really strong. *g*

I didn't make those cookies, but I did bake the Mrs Smith apple pie that's been in the freezer for about a year now. There was some last minute scrambling when I realised I didn't have toothpicks, pineapple rings or cloves and I thought the store closed at noon. Thankfully my dialing finger worked and I called the store, I had 35 minutes. Whew!

Heading back from the store there was a truly plump little squirrel working on something it found in the parking lot. I even talked to it; "squirrel!" It didn't move, just kept working on whatever it was, bent over and using it's cute wee hands. I don't know why I feel compelled to talk to squirrels when I'm out on walks. I'm thinking crazy. But maybe that's just me. *g*

I made amaranth pancakes for breakfast. So. Damn. Good. Seriously, folks, this gluten free stuff is often better than the various foods made with wheat. With the exception of bread, of course. A lot of times the texture is better, too. And many of the recipes that Bob's Red Mill publishes are meant to be as nutritionally complete as possible. Imagine that, healthy pancakes that are yummy? The mind boggles.

Mom ended up cooking the T-Day meal in St Louis, after all. The good part is that since she didn't host a gathering that included my aunts and uncle and all of us kids, the fuss was kept to a minimum. And she got to spend time with my niece and nephew, with Ellen being in from college and Matt from whatever skating training camp he's been in. He just missed getting into the World Cup by a fraction of a second, apparently, so he's been working hard at improving whatever it is that needs to be improved. I'm still just boggled at the thought that a nephew of mine skates all over the world.

I've been thinking warm and fuzzy thoughts about work, lately. The new store manager seems like a very nice man. And the other managers are such good people. Not that they haven't irritated me, on occasion, you get that with any job. But the good so far outweighs the negative that it's quite easy to keep perspective. For instance, one of the managers always brings food whenever she closes, it's just a perk of working with her. And she even sat down and talked with me that week I had to miss a day before my paid time off kicked in. I still had to miss that day of pay, but the talk helped. A little. LOL I'd still rather have had the money from making the day up. But, you know, they try to keep the stress down, we rarely hear about the work we didn't get to finish. With business the way it is, we're all supposed to focus on the customers. OK, I'm rambling now...
