Dinner tonight

On the gluten free front, I give you:

Au gratin potatoes
Meatloaf
Tossed salad with ranch dressing

Yum!



All I had to do to make the meatloaf gluten free was to use a slice of gluten free bread. Easy peasy. More complicated were the potatoes. Au gratin potatoes The only adjustments I made were to double the amount of rice flour, skip the layer of cheese on top (cause really, there's plenty in the sauce) and to use fresh onion, sauteed in the butter. I don't believe she talks about cooking the rice and butter to a roux, but that's what I did.

And the dressing for the salad was Ken's. A tip given by a customer some time back.

Yay trashy and gluten free! *throws confetti*
